Black Bean and Corn Salad

Ok I am a firm believer that a recipe is only as good as the ingredients you put in it. Use canned brands that stand on their own and only really fresh produce and good olive oil. I really prefer rice wine vinegar with this. It is a clean light flavor.
This is what I threw together to eat with chicken tonight. It's really fresh tasting! There is no science to this. Add more or less of something if you want.


1 can of black beans, drained

1 can of corn, drained (2 cups of fresh off the cob is better but this works fine)
1/2 a med. red bell pepper chopped small
1 med. tomato (seeds removed) chopped small
2/3 scallions sliced

2 tbsp olive oil
1 tbsp rice wine vinegar
S & P
Mix it all together!!!
